Lisa is excited about using her experience and love for the
elderly as she and her partner pursue a business in Medical Nutrition Therapy
for Diabetics. Lisa graduated from Illinois State University in 1987 with a
Bachelor of Science degree and an emphasis in Dietetics. She attended Barnes
Hospital 11-month dietetic internship program and graduated in 1988. Her first
position involved clinical and long-term care consulting at St. Mary’s Hospital
in Centralia. Lisa then accepted a position as a part-time clinical dietitian at
St. Joseph’s Hospital in Highland and as a part-time wellness dietitian at The
Health Factory in Highland. In 1991, she accepted a full-time position as a
Marketing Specialist of Wellness Programs at St. Elizabeth’s Hospital in
Belleville. Her responsibilities included marketing and management of all
wellness programs including health screenings, chair aerobics for seniors,
weight loss programs for children and adults, smoking cessation classes, and
body composition testing. Beginning in 1988 and continuing to the present day,
Lisa has provided consulting services for the elderly in long-term care
facilities. In 1994, she began her own company providing dietary consulting
services for long-term care facilities, small rural hospitals, home health
agencies, and individual clients. She has counseled many diabetic patients over
the years and this continues to be her passion today. She has a strong
commitment to wellness and prevention. She co-authored a study entitled “Use of
Glyconutrient Supplementation in a Nursing Home Population” which was published
in the Proceedings of the Fisher Institute for Medical Research: Vol. 3,
September 2004.

Cathy’s
experience in providing the best care possible for her daughter who was
diagnosed with Type 1 diabetes over two years ago has given her a great sense
of purpose in being able to utilize her dietetic skills in educating and
informing her community, school district and diabetic support groups on how
proper nutrition can make diabetes easier to live with. Cathy graduated from
Western Illinois University in 1987 with a Bachelor of Science degree
emphasizing dietetics. After completing a professional internship program at
St. John’s Hospital in Springfield, IL, Cathy began her career with Dietary Food
Management Systems, Inc. of Des Moines, IA in 1988 as a dietitian specializing
in software development and servicing for the food service industry. Her next
position was as a food service director/facility dietitian for the Dirksen House
Long-term Care facility in Springfield, IL. There, she was able to utilize her
food service skills and branch out into the area of clinical dietetics where
Cathy directed nutritional screening and meal planning activities for residents
at this 250 bed long-term care facility. Cathy’s next position at the City of
Springfield (Illinois) Department of Public Health provided her with critical
experience in providing expert dietetic advice for clients in a public health
atmosphere. These clients included expectant mothers and caregivers that were
supporting their families with the assistance of the federal Women, Infants, and
Children (WIC) program. From 1993-1997, Cathy served on the faculty of the
Southern Illinois University School of Medicine Family Practice Residency
Program. There, she instructed medical residents, advised faculty physicians on
dietetic issues related to operation of their associated Maternal/Child Health
Clinic and provided dietetic counseling for patients at the clinic. From 1997
to present, Cathy still maintains a part-time position as a certified food
service sanitation instructor with Corporate Training Center, Ltd. of
Springfield, IL. As a married, stay-at-home mother of five children, Cathy is
eager to return to the workforce in the area of providing reliable dietetic
support for a wide range of clients she has been working with over her
professional career. While providing all of the meal planning and ensuring proper
nutrition for a family of seven is no easy task, Cathy has become especially
talented in the area of diabetic health and associated nutritional issues.
